After the listing ends, open the listing and look for the Print shipping label link. You can also go to the item in the Selling section of My eBay to do the same thing. Once the item is shipped, mark it as “Shipped" in My eBay to keep track. That's automatically done if you print and pay for your shipping labels with PayPal.
